Det er for længe siden at vi har været i New Zealand. For her finder vi altså nævneværdige vine, som ikke nødevendigvis nyder alt for godt af den, ellers fortjente, danske hype. Her på solrige og vindkølede skråninger i Hawke’s Bay folder Tony Bish sig ud med Chardonnay-druer fra markerne Two Terraces og Kokako Farms. Druerne håndplukkes og presses som helklaser, inden gæring og lagring i nøje udvalgte franske egetræsfade. Her modner vinen med regelmæssig bâtonnage.

Så har vi australsk Chardonnay med en fremragende balance mellem et tydeligt fadpræg, altså noter af vanilje, varme krydderier og et strejf af kernemælk, men samtidig med en friskhed der faktisk står over det cremede. I munden kombineres den her fyldige, varme stil med en overraskende frisk og syrlig profil, der giver en enorm flot spændstighed. Det er altså bare særdeles tilfredsstillende at drikke.

It’s been too long since we last visited New Zealand. Because this is where you’ll find truly remarkable wines that don’t always receive the level of hype they actually deserve in Denmark. Here, on the sunny and wind-cooled slopes of Hawke’s Bay, Tony Bish showcases Chardonnay grapes from the Two Terraces and Kokako Farms vineyards. The grapes are handpicked and whole-bunch pressed before fermentation and aging in carefully selected French oak barrels. The wine matures with regular bâtonnage.

What we have here is a Chardonnay with an excellent balance between a clear oak influence – notes of vanilla, warm spices, and a hint of buttermilk – while still maintaining a freshness that actually stands above the creamy texture. On the palate, this full-bodied and warm style is combined with a surprisingly fresh and vibrant acidity, giving it impressive tension and energy. It’s simply a highly satisfying wine to drink.
